Hi,
do i have to back up each file via email or dropbox or is there an alternative?

i need to reinstall notion, it may fix a bug ...

can i just drag all the files to desktop via itunes->app->notion->

If you want your backups off the iPad (a good idea!), then I think you have the solutions, already.
