I am writing a symphonic suite, which can sometimes have not the same instrumentation, is Notion allow to hide the parts on the score I do not want to see empty...

In the "Score Setup" if you click the "Green Eye" button of the staff you wish to change it will "Hide" the selected staff and it's color changes to "Gray".
The staff instrument plays normally; however it is hidden from view in the score on screen and from a printer.

There is also an option under Tools > Hide Resting Staves. This hides any staves on a page that don't have notes.

I missed that GyorgyL asked about hiding "empty" parts. Empty\Resting measures I assume.
Also recall, the "Hide Resting Staves" feature only applies if the "View" menu is set to "Pages Across" or "Pages Down".
