What I would like to do is to stop anywhere, modify things (eventually looping some words for accuracy) and... restart anywhere with the right syllabe fitting the right note ;)

As you have already realized, the limitation is in the way EWQL designed their Wordbuilder interface to be operated as a GUI tool, and only as a GUI tool. There is no programmatic interface available in the EWQL Choirs software by which text syllables can be "sent to" Wordbuilder from another program (Notion or any other sequencer), as you must type the words into the EWQL Wordbuilder GUI. There are good reasons for that design approach with that product, because the human perception of speach is so extremely sensitive that it is very difficult to fool the ear into hearing the illusion of words from what is actually a reorganized series of fragmentary samples, and so to create that illusion convincingly requires very meticulous adjustment of the fine details of parameters for timing and emphasis which only really could be practical to provide in the EWQL software's own Wordbuilder GUI.

That being said, what you CAN do is to go to the Wordbuilder GUI and (using your mouse) reposition that syllable cursor anywhere in the middle of the text that you want to start from. There is nothing automatic or convenient about it, but it is possible to do so, for instance when you are working out details in small sections of music at a time. You don't necessarily have to start the playback from the beginning in order to sync up the notion sequence playback of notes to the appropriate position in the text, you just have to manually move the Wordbuilder's text position line to the correct syllable for it to start from.

There is another "singing" instrument from EWQL called Voices of Passion which is much simpler (and thus limited) in its vocabulary and uses fairly extensive keyswitching to select from a resonable pallet of syllables. I am considering creating a Notion Rules file to effectively accomplish something like what you are wishing for as far as having text in a Notion score actually control the singing of words, but it is only really a practical possibility with the EWQL Voices of Passion instrument. I don't think it would even be conceivable to attempt such a feat with EWQL Symphonic Choirs.

Thanks a lot for the tip, dear.
Don't you think it could be a good idea to suggest to EastWest to make the syllabes triggered by a given MIDI CC ?

I think the quality of the effect would diminish if we had to use MIDI CC for everything. You should initiate some sort of position mapping feature request with EastWest directly.

You might want to visit the EW forums. There's a section just for SC and Wordbuilder.
