NTempo
Is there a way to "conduct" in NTempo mode beating each eight (and not each quarter) even if the time is 4/4 ?

Just insert eights in to the NTempo-Staff. Read chapter 4.8 in the Help.pdf. I think this should answer your question. Cheers. Rudi

I don't understand what you mean... Do I have to write eights all along the piece in the NTempo-Staff ? It will be very time consuming...

You'll have to write in some eighths, but you could copy several measures and paste them to the next few measures, etc. which should speed up the process considerably.
