I'm french so I'm sorry for my poor English.

I just want to do a slow down and an acceleration in notion 3 but I don't find the items or the shortcut to do that.

Hit "r" 1 time –> cursor turns into "rit."
Hit "r" 2 times –> cursor turns into "accel."

Click and place at bar you want the score starts to slow down/accelerate.
Click and place at bar you want it ends and set metronome speed reach in the little
highlighted text box.
