I don't think you can combine the staves. I would enter a new grand staff, copy the music over to it, and delete the original.

Use the staff for Voice. It will have a V in front of it, but it is a single staff, and it plays back as piano.

Re: Transposing
Set up a new staff for the bass guitar. Copy the Bari sax line, and paste it in. It SHOULD transpose automatically, although the octave may be wrong, and that's easy to correct.
Note: I don't have a Bari sax instrument to try it with, but it seems to work with other transposing instruments.

You would access it from your computer, via iTunes>File Sharing. If you want it available on your iPad, send it to Dropbox, instead. (Assuming you have Dropbox. If you don't, you should!) It will be put in a folder called Apps>Notion Mobile. Then, you can email it from Dropbox, among other options.

You can do both. From your score, tap on the settings icon (that looks like a gear wheel) and choose Score Setup... As I've said before, I'm used to Finale. There, you can either specify the number of measures per system, or fine tune by moving measures up or down. The systems affected automatically respace. I have always been taught that the last system should fill the page, not be shortened. A better request (IMO) would be to allow us to move measures up or down to adjacent systems, and/or to specify the number of measures per individual system.
