Basically the height of each part will only allow notes to be inserted by mouse within a certain range. The height and range of a part is increased when there are notes of extreme enough ranges already present. If you think about it you can't expect to be able to input by mouse the highest note play...

Am I right in thinking that you have taken a score from Sibelius, turned it into midi and then imported it into Notion to find that the dynamics have not been correctly interpreted? I have a feeling that Notion thinks Sibelius's pppp is mf either because Sibelius's dynamics are not very flexible and...

You need to buy Notion and get the expansion sound pack for strings to get all those extra performance techniques which aren't as common. I'm not sure whether you can but an expansion sound for the demo.

I like hearing scores like this and cringing at the thought of imagining hearing it as according to the gospel of Sibelius in comparison. (Though admittedly Sibelius is/are getting better at performance quality).

Are you talking about piano? If so Notion doesn't really do fingering, just text which can be attached to a note or landmark in the score I think which means you can't have more than one fingering mark per note. Have you tried putting all three finger numbers in the same bit of text (ie. using enter...
