For the dynamics, you can find the velocity settings in the prules files, and can even edit it if needed. Everything is explained in the tutorials...

Same problem for me, when I want to modify Staff Groups options in an already notated score, initiated from midi import, nothing happens. Only braces seem to work correctly.

I've got a bracket defined by default which I can't get rid of.
