As near as I can tell, there isn't a simple way. But I don't know what it should look like, either. Can you post a picture of what you have in mind? That might help us come up with a workaround.

To change the time (or key) signature, click in a measure. (A green bar should appear.) Tap on the icon that looks a [4/4 time sig and quarter note=?] That opens a submenu, where you can choose to change a lot of things. You can play them in with the piano keyboard, but, as you say, that's still note by note.
If you want to tap a single key, and have a 3-note chord appear, no, you can't do that.
